The historic headquarters of Corte Aleardi is located in the heart of Valpolicella Classica, an area that extends across the hills between Lake Garda and Verona.
Amarone stands out from other great wines, both for the varieties of grapes used for its winemaking, typical of this area of the Veneto region, but above all because it is produced with the grape drying process.
The ancient technique of Amarone wine
The ancient drying technique consists of letting the grapes rest on bamboo racks during the months of October, November and December, to concentrate the scents and aromas of the future must. This extraordinary procedure takes place in the Fruit Room, which constitutes a stage of the guided tour (only in the “Amarone Visit” or “Amarone Experience” typology).
Afterwards the guests (only in the "Amarone Visit" or "Amarone Experience" typology) descend into the large cellars dedicated to aging in wood, the air of the large cellar in Gargagnago, in Valpolicella, is full of perfumes, a pleasant mix of hints of wine, wood and a hint of cherry.
Amarone wine tasting
Amarone della Valpolicella is one of the richest and most princely of red wines, whose intensity and refinement is at the top among important aging wines.
Tasting Amarone requires a particular moment of meditation and the dishes that accompany it must be chosen carefully, for example roasts, game or longer-aged cheeses.
The bunches of Corvina grapes, Rondinella grapes and Molinara grapes are left to dry for up to four months, then they are delicately pressed, then the monster is vinified, and the wine is left to rest in wooden barrels for a minimum period of three years. Only after all this is the wine ready to be put on the market. The concentration of Amarone wine allows long periods of aging in the cellar, even for 8-10 years and can only improve.

The oenological characteristics of Amarone wine
Amarone is a structured, important, full-bodied red wine, with long aging and excellent conservation properties, with considerable potential for evolution over time. From Amarone we can expect a wine with an organoleptic profile that identifies the winemaking style decided by the producer. The Amarones vinified according to our tradition are soft wines, with from 5 to 8 grams/liter of residual sugars and alcohol content between 16 and 17% vol. The fact that the wine is obtained from dried grapes gives it, in all cases, an extraordinary concentration which translates into important structure and tannins, rounded off by refinement and alcoholic heat.
Amarone: how to taste your bottle of Amarone at home
For tasting, it is advisable to open the bottle of Amarone at least one hour beforehand, up to several hours in the case of wines that have been aged for a long time or that have spent a long period in the cellar. In the latter case it is advisable to stand the bottle upright at least one day before tasting. Use a large glass with ample light to allow the diffusion of the aromas. The ideal serving temperature varies between 18 and 20°C.
